Chickpea Beet Soup

A savory chickpea beet soup to warm up your day and give you a nice energy boost! ♥️

Recipe makes 2 servings:

-2 large beets

-1 cup cooked chickpeas

-1/2 small sweet onion

-2 cups bone broth

-2 tbsp homemade buttermilk (milk of choice with a dash of vinegar)

-2 tbsp extra virgin olive oil

-salt and pepper to taste


After washing and peeling beets, cut into 4ths and bake for 30-40 min on 375F.

In a pan, combine oil and onion and cook on low heat for a few minutes. Then add in bone broth and buttermilk, bring to a boil for 2 minutes. Add in chickpeas and cooked beets, combine well.

Transfer soup to a blender, or use an immersion blender for 2 minutes. Garnish with fresh dill and enjoy! ♥️
