Basil Pesto Chicken & Pasta

This dinner is super simple, and ready in less than 20 minutes! Delicious and packed with nutrients, so enjoy this one guilt-free! 

What you'll need:

 

  • 1 package organic free range chicken breasts

  • 2 cups organic broccoli florets

  • 2 garlic cloves

  • 1 onion, chopped

  • 1/2 cup homemade basilpesto* (see sides)

  • 2 cups whole wheat pasta of choice (bowties work well)

  • 4 cups of water 

  • salt and pepper to taste

  • pinch of red pepper flakes

  • 1 cup sun dried tomatoes

  • 2 tbsp extra virgin olive oil 

What to do:

 

  1. Season chicken with red pepper flakes, salt and pepper

  2. Heat olive oil in pan on medium-high heat, cook chicken with onions and sundried tomatoes (about 6 min each side)

  3. While chicken is cooking, bring water to a boil, then add pasta for about 7 minutes, or until al dente 

  4. Place broccoli into a glass bowl with 1/4 cup water. Cover with a ceramic or glass plate, and steam in microwave for about 4 minutes

  5. Make basil pesto (*see recipe in Sides)

  6. In a large bowl, combine sliced chicken, onions, sundried tomatoes, broccoli, pasta and pesto until mixed well

  7. Enjoy!
