Because pumpkin shouldn't JUST be a fall thing. These energy balls are super easy to make and are the perfect afternoon snack! Gluten, dairy AND refined sugar FREE!
🎃 Ingredients:
-1 cup pitted Medjool dates
-1/4 cup pecans or walnuts
-1/2 cup pumpkin purée (or sweet potato)
-1/4 cup unsweetened coconut flakes
-2/3 cup oats
-2 tsp vanilla
-1 tsp cinnamon
-1/4 tsp nutmeg
-1/4 tsp ground clove
-Pinch of salt
🎃 Instructions:
Blend all ingredients in a food processor and form into balls. Roll in coconut flakes and store in the fridge for up to a week!
