Sun-Dried Tomato Quinoa Bowl

This bowl is REALLY, REALLY good. Like really. And really good for you, too. It's super simple to make, and sure to become one of your staple weeknight dinners. Using all whole ingredients, this bowl is packed with all the right kinds of nutrition, ready to feed your mind and body!


Recipe

Ingredients:

-a bunch of organic kale, chopped

-1 package organic chicken breasts, cut into strips

-1 cup sun-dried tomato

-2 cloves garlic

-1/4 cup almonds

-2 cups quinoa, cooked

-1 avocado, sliced

>> use this marinade for all 3 steps <<

-1/4 cup extra virgin olive oil

-1 tbsp fresh lemon juice

-pinch of salt


Instructions:

1. Marinate kale in a large ziplock bag overnight


2. Marinate chicken separately for a few hours prior to cooking


3. Puree marinade, sun-dried tomatoes, garlic and almonds


4. Combine this puree with cooked quinoa


5. Grill the chicken


6. Combine all ingredients in a bowl, top with avocado slices. ENJOY!
