Healthy Chicken Ranch Salad

Make this homemade ranch dressing in a larger quantity to store in your fridge!

Ingredients:
 
-1 lb organic chicken breast, cubed
 
-1 tbsp olive oil
 
-4 cups dark leafy greens, packed
 
-1/4 small red onion, sliced
 
-3/4 cup cherry tomatoes, chopped
 
-1/2 cucumber, chopped
 
-1 avocado, cubed
 
-1/3 cup organic corn kernels
 

 
Homemade ranch dressing:
 
-1 cup plain Greek yogurt
 
-2-3 cloves garlic, minced
 
-2 tbsp lemon juice
 
-2 tbsp onion, minced
 
-1 tbsp Dijon mustard
 
-1 tbsp fresh parsley, chopped
 
-1 tbsp fresh dill, chopped
 
-2 tbsp fresh chives, chopped
 
-sea salt and pepper to taste
 

 
Instructions:
 
1. Combine all dressing ingredients in a mason jar, cover and shake
 
2. Pour about 1/3 of dressing over chicken and marinate for at least 15 minutes. Refrigerate remaining dressing until ready to use
 
3. Heat oil in a cast iron skillet and cook chicken until golden brown, stirring often, about 7 minutes
 
4. Assemble salad and enjoy! 💚
