Carrot Cake Granola Bites

These are SO easy to put together and so delicious! This no-bake recipe is perfect for a snack or dessert… or breakfast. 😅


1 cup baby carrots

2 cups coconut granola (recipe on my page)

1 tablespoon chia seeds

1 tablespoon flaxseed meal

1 teaspoon cinnamon

1/4 teaspoon ground nutmeg

1 teaspoon pure vanilla extract

1/2 cup nut butter of choice

2/3 cup pure maple syrup

1 cup almond flour

1/3 cup coconut flour

🥕Coconut butter shell:

1/2 cup coconut butter

1/4 teaspoon pure vanilla extract


1. In a food processor or blender, chop up the carrots until almost grated

2. Add granola, chia, flax, cinnamon, nutmeg and vanilla and pulse to combine

3. Add nut butter and maple syrup, pulse until well incorporated

4. Spoon mixture into a bowl and add in both flours, folding them into the mix

5. Using about 1 tablespoon each, roll into balls, and chill for 15 minutes before enjoying.

🥕OPTIONAL COATING: Melt coconut butter and add in vanilla, rolling the balls in the mixture to coat. Put them onto a parchment-lined baking sheet and place in fridge to chill until hardened.
