One-pan, ready in 20 minutes, this low carb meal is packed with nutrients and is great for meal prepping!
• 1 cauliflower head, chopped into small pieces • 1 package organic chicken, chopped into cubes • 1 onion, chopped • 1 red bell pepper, chopped • 2 organic eggs, beaten • 1 tablespoon ginger, chopped • 2 garlic cloves, minced • 3 tablespoons liquid aminos • 1 tablespoon sesame oil • 3 tablespoons extra virgin coconut oil
1. Heat 1 tbsp coconut oil in a large heavy pan. Add the beaten eggs, let sit and cook about a minute or two, then flip and cook 30 seconds on the other side. Remove from pan, and chop into small strips.
2. Add the second tbsp of oil to the pan and add the garlic, ginger and onion. Cook for a couple minutes, then add the chicken pieces and peppers. Cook about 7 minutes, stirring occasionally. Once chicken is cooked through, remove from pan.
3. Add the remaining tbsp of coconut oil and the cauliflower pieces. Cook about 5 minutes, stirring often. Once browned, add back all the cooked ingredients, along with the liquid aminos and sesame oils. Cook and stir well for another few minutes, let cool then enjoy!
