A yummy Chickpea Scramble for those of you avoiding eggs 💚 You can personalize this as much or as little as you want. Turn it into a skillet with cubed potatoes, peppers, onions, spinach, mushrooms, whatever you love! The taste is on point, and it resembles scrambled eggs for those of you with an egg allergy or sensitivity.
What you need ⬇️ -1 can organic chickpeas -1/2 tsp turmeric -1/2 tsp paprika -salt and pepper, to taste -1/4 cup onion, diced -1/4 cup bell peppers, diced -2 cloves garlic, minced -1-2 tsp coconut or olive oil -1/2 avocado, cubed for topping -1 cup mixed greens or spinach Optional add ins ⬇️ Mushrooms, turkey bacon, breakfast potatoes, cubed sweet (or purple) potatoes or cheese How to make it ⬇️ 1. Mash the chickpeas with a fork in a bowl and mix in the spices 2. Heat the oil in a pan over medium heat, sauté peppers and onion for a few minutes, then add the garlic for a minute more 3. Add the chickpeas to the pan and cook for another 5 minutes, stirring every so often 4. Either cook in the greens, or serve over a bed of fresh mixed greens and top with sliced avocado Enjoy! 🥑
