Tomato Basil Soup

Ingredients: -1 can crushed organic tomatoes (28oz) -basil (fresh chopped or dried) -sea salt & pepper to taste -1 can coconut milk (11 oz) -1-2 cans chickpeas, drained & rinsed (use 2 for a thicker soup) -1 tbsp coconut oil Instructions: 1. Heat the coconut oil over medium heat, then add the crushed tomatoes and spices. Bring to a boil, then add the coconut milk. 2. Turn to a simmer, then using a food processor, blend up the chickpeas and a few tablespoons of water. 3. Add the chickpeas to the soup, and blend well. Continue simmering for about 5 more minutes or so. 4. Adjust/add spices if needed. Serve with the option to sprinkle hemp hearts on top! *If you have any leftover, I would suggest making a turkey bean chili with the extra, or using it as a topping for crab cakes! 🌿
