Veggie Chickpea Roast w/ Maple Tahini Dressing

This super easy roast is packed with nutrients and topped with a sweet and savory sauce that goes well on just about anything! Definitely worth a try!


Veggies:

-2 cups chopped broccoli

-2 cups halved brussel sprouts

-1 large sweet potato, cubed

-1 can chickpeas, drained + rinsed

-2 tbsp extra virgin olive oil (or sub lemon juice)

-garlic powder, sea salt and pepper


Dressing ingredients:

-1/2 cup Dijon mustard

-1/2 cup tahini

-1/2 cup water

-1/4 cup apple cider vinegar

-2 tbsp pure maple syrup

-2 tbsp lemon juice

-sea salt + pepper to taste


Directions:

1. Preheat oven to 400F, line a large baking sheet with parchment paper

2. Mix all veggie ingredients together in a large bowl until combined well

3. Transfer veggies to baking sheet and roast for 15 minutes, then toss and roast for another 5 minutes

4. Change the oven to broil, and cook another 5 minutes or until brussel sprouts are charred, then transfer veggies back to large bowl

5. While veggies are roasting, combine dressing ingredients in a small bowl, adding maple syrup to taste preference

6. Plate veggies, top with dressing, stir to coat and enjoy!!


*Refrigerate remaining dressing for up to 5 days 😊
